Consider Michael Olson’s Second Law of the the Food Chain: The father we go from the source of our food, the less control we have over what’s in that food!

When we buy a package of hamburger meat from the big box store, that hamburger might well have come from Australia, Brazil or China, and it might well be from one animal, or from many animals, and be processed by one of the nation’s Big Four meat packers – Tyson, JBS, Cargill and Smithfied – as they now control 85 percent of the nation’s beef.
Though we once lived very close to the source of our food, we now are likely to live thousands of miles away from that source As a consequence, we now have very little control over what’s in our food, and must therefore rely on others, many others, to guarantee the safety and indeed the efficacy of our food.
Some are happy with this extended food chain, as it provides sustenance that is both cheap and convenient. But others are not so happy, and would prefer to eat what they consider to be real food, grown from real soil, by real farmers. The unhappy ones lead us to ask:
