Defending Beef: The Case for Sustainable Meat Production
The federal government’s dietary guidelines, which govern school lunch and other federal food programs, is expected to soon call for less meat and more fruits and vegetables as part of “an environmentally friendly diet.”
This edict will be in keeping with Department of Agriculture’s Dietary Guidelines Advisory Committee recommendations for a healthy diet based on foods that are not only good for human health, but also good for the environment.
Cows, according to a study in the Proceedings of the National Academy of Sciences, are not good for the environment, as they produce more gases and water pollution while using more water and land per calorie than other animal proteins.
