We begin with Michael Olson’s Second Law of the Food Chain: The farther we go from the source of our food, the less control we have over what’s in our food.
If we grow our own food, we have total control over what we put in our food, and therefore have no need to have someone protect us from what might be in our food.
But if we rely on food produced by someone far away, we have no control over what they might put in our food. And if you think about it, you’ll realize that the further away those producers are from us, the less incentive they have to put only the very best of things in our food.
And so the further we go from the source of our food, the more we need someone to protect us from what might be in our food.
Some will argue that all foods should be made to conform to the same rigid safety standards, regardless of where they were produced. But others say there is no need to govern the food neighbor sells to neighbor, after all, neighbors do tend to be very close and therefore have a lot of control over each other. And so we ask:
