The Civil War, like many wars, brought new technologies to the table, not the least of which was the mass production of processed foods.
And what an opportune time it was for food manufacturers, because people were moving off the farm and into town to lead the good life of having someone else feed them.
What those in the food business quickly discovered was that there was no legal reason why they needed to provide good, clean high-quality food to city people, when they could make a lot more money selling them cheap, adulterated foods at high prices.
And so the unscrupulous among them mixed red dye into corn syrup, added a few hay seeds, and sold it as “strawberry jam.” And they added soap and bean or pea flour to the chocolate to make it go further. The flour they sold was often mixed with chalk, clay or plaster of paris. And they made brown sugar brown by adding dead and living lice.
Clearly, something needed to be done to protect the poor city people from the ravages of the unscrupulous. And so we ask:
