It’s a fight that seems to bring everyone to the boil, including gourmets, agronomists, parents, feminists, chemists, epidemiologists, nutritionists, biologists, economists, and animal lovers.
The extent to which we fight over milk, while using it to build our civilization, is a pretty good indication of its importance in our lives. And so we pause for a moment to look back at the 10,000 year history of our relationship with this food and ask:
