It really does seem as though we are running out of food. That is not to say that we are running out of things to eat. No! On the contrary! There are many things to eat, and most all of them are cheap and easy to get, too!
And yet, so many of those things we are being offered in brightly colored packages for so little money have very little food in them. It is one of the ways they make food cheap– take the food out of it and put what is left into a colorful package.
We eat the cheap food because its cheap and easy to get. And yet when we do our bodies go hungry and cry out for nutrients. We eat more cheap food to satisfy the hunger, but it does stop our bodies from crying out for nutrients. We continue to eat the cheap food until and our bodies rebel, store up fat, and break down.
Then one day we wake up to Michael Olson’s Third Law of the Food Chain: Cheap food isn’t! Then we ask, “What can we do?”
One thing that could be done quite readily is to return to the essential simplicity of freshly sprouted seeds.
How simple? Sow some uncontaminated seeds in organic soil. Add clean water, fresh air and sunshine. Then harvest the sprouted seeds and enjoy the maximum nutrition available in the microgreens.
This simple solution to the problem of cheap food leads us to ask:
