Having been raised in Montana, at a time when wildlife was plentiful and money was scarce, I had the privilege of fishing, hunting and eating a lot of wild meat.
The taste of the wild meat depended on what mother nature provided for the critter to eat. Venison eating from farmers’ pastures would taste much different than venison eating from badlands’ sagebrush. That pretty much guaranteed that meat from each critter would have a distinct character, and so we learned where to hunt.
I now live in metropolitan California, where wildlife is protected and the food chain is civilized. No wild swings in taste here! That said, I never did lose my taste for the wild, and so have always remained on the hunt for it.
Imagine my surprise when, quite some time ago, I found a sustainable source of wild food being offered for sale at my farmer’s market. What caught my attention at the booth were the tiny tins of wild salmon and tuna that I believed would make a great contribution to the family’s stash of survival foods. The tiny tins contained pure protein and other essential nutrients that could be safely stored away for years!
But then I discovered how good the wild fish tasted, and how well they satisfied my mid-day hunger for real food, and so the tins started disappearing from the family’s stash of survival food. And that leads me to ask, “How does 3 ounces of fish satisfy a lunchtime hunger?”
